Pork Roast Ingredients WINE DIJON January 4 -5 pounds of pork roast 2 tablespoons kosher salt 1 teaspoon pepper 2 tablespoons sage 1 1 / 2 cups white wine or chicken broth 1 tablespoon Dijon mustard 3 tablespoons orange marmalade 3 tablespoons of butter Cooking Instructions Preheat oven to 375 degrees. Mix salt, pepper and sage and rub generously all over the pork roast. Place pork roast in the pan Add the wine and 1 / 2 cup white. No cover. During cooking roast might need to replace fluid or a little wine or chicken broth or a little water. Place Roast pork in oven and bake for 1 1 / 2 hours or until juices run clear. Mix the jam with Dijon mustard and 1 / 2 cup wine and brush on roast pork after 1 hour of cooking. Remove roast from oven and place on a plate or cutting board. Let stand for 15 minutes before slicing. While roast "rest" deglaze the pan with the rest of the wine you can enjoy all the bits from the bottom up. Add the sauce to spray deicing fluid. Add 3 T of butter and bring to a boil. Reduce heat and simmer until liquid reduces and thickens. Slice roast and spoon sauce over the slices. VENUS
